In 1969, Piero, a young pioneer in the restaurant industry, acquired an old dairy with a kitchen in Piazza Aspari. The following year, he married Pia, who, after completing various cooking courses, decided to specialize in homemade fresh pasta, focusing on traditional Piacenza recipes. This marked the beginning of their culinary journey, producing dishes such as Pisarei e fasรฒ, Turtei cun la cua, and Anolini, which quickly garnered acclaim from both customers and industry experts, solidifying the restaurant's regional character. Their family grew with the additions of Micaela in 1971 and Alessandro in 1972.
